Ingredients:
* Cottage cheese "Ani" (7% fat) — 400 g
* Rice flour — 250 g
* Eggs — 2 pcs.
* Brown sugar — 1 tsp
* Baking powder — 1 tsp
* Salt — 1 tsp
* Sesame seeds — optional
Preparation:
1. Place the cottage cheese in a large bowl, add eggs, sugar, and salt. Mix until smooth using a blender or a fork.
2. Combine the rice flour with the baking powder and add it to the cottage cheese mixture. Knead into a pliable dough by hand, cover with a towel, and refrigerate for 20 minutes.
3. Divide the dough into 8 pieces. Roll each piece into a log (1.5–2 cm thick), then shape into a ring and pinch the ends firmly.
4. Preheat the oven to 180°C. Line a baking sheet with parchment paper and place the bagels on it, leaving space between them.
5. Sprinkle with sesame seeds if desired and bake for 20–25 minutes.
6. Transfer the finished bagels to a wooden board, cover with a towel, and let them rest for 10–15 minutes.
