Cottage Cheese Muffins

Cottage Cheese Muffins

Ingredients


- "Ani" Cottage Cheese - 200 g
- "Ani" Sour Cream - 2 tbsp
- Vegetable Oil - 2 tbsp
- Eggs - 2
- Sugar - 1 cup
- Baking Soda - 0.5 tsp (quench in 1 tsp of vinegar or lemon juice)
- Flour - 1 cup
- Vanilla - to taste

 

Preparation


1. In a bowl, combine the cottage cheese, sour cream, eggs, and vanilla. Mix well until you get a smooth consistency.
2. Add the sugar and vegetable oil, and continue mixing until the sugar is partially dissolved.
3. In a separate small bowl, quench the baking soda with vinegar or lemon juice. Once it activates, add it to the batter and mix.
4. Gradually add the flour, stirring until you get a medium-thick batter.
5. Pour the batter into muffin molds, greased with a kitchen brush beforehand.
6. Bake in a preheated oven at 180°C for 25-30 minutes until the muffins turn golden.


Tip: You can add dried fruits or nuts for extra flavor.
