Main Mixture
- 200g fresh cottage cheese (curd cheese)
- 3 tbsp condensed milk
- 3 tbsp shredded coconut
Filling and Coating
- 30-50g raisins (or almonds, optionally)
- 20-30g shredded coconut (for coating the balls)
Preparation Steps
- Soak the raisins in boiling water for a few minutes, then drain and dry them with a paper towel.
- Press the cottage cheese through a fine-mesh sieve or blend it until it becomes a smooth, creamy mass without lumps.
- Add the condensed milk and shredded coconut to the cottage cheese. Mix well until perfectly combined.
- Slightly moisten your hands with water. Take about half a tablespoon of the mixture, place a raisin in the center, and roll it into a small ball.
- Roll each ball in the shredded coconut until it is completely covered in "snowy" flakes.
- Place the finished truffles in the refrigerator for 15-20 minutes to allow them to firm up.
💡 Tips
- For a classic "Raffaello" flavor, you can replace the raisins with a whole almond or hazelnut.
- You can add a pinch of vanillin to the cottage cheese mixture for a more delicate aroma.
- Since this dessert is made with fresh dairy, it is best kept in the refrigerator and consumed within 1–2 days.
