CITRUSY CAKE WITH KEFIR

Ingredients

  • Semolina: 400 g
  • "Ani" Kefir: 500 ml
  • Sugar: 200 g
  • Eggs: 3 pcs.
  • Butter: 100 g (melted)
  • Oranges: 2 large
  • Baking powder: 1.5 tsp
  • Vanillin and salt: a pinch of each

 

Preparation:

  1. Pour "Ani" kefir over the semolina, mix well, and let it sit for 30-60 minutes to swell.
  2. Whisk the eggs with sugar, vanillin, and salt until light and fluffy.
  3. Grate the orange zest and squeeze the juice from the fruit.
  4. Add the melted butter, egg mixture, orange juice, and zest to the swollen semolina. Mix thoroughly.
  5. Finally, add the baking powder, mix, and pour the batter into a greased baking dish.
  6. Bake in a preheated oven at 180°C for about 40-50 minutes until golden brown.
