Ingredients
For the Dough
- 400 g. Cottage cheese
- 1 whole egg
- 1 egg white
- 60 g. whole-wheat flour
- Vanilla
For the Cream
- 150 g. Sour cream
- 1 egg
- Quince syrup
- Berries
Preparation Method
First, take the cottage cheese and add the egg to it. Mix them together until a homogeneous mass is obtained.
Then add the whole-wheat flour. Knead well by hand so that the ingredients are mixed and a ball of dough is formed.
Round the resulting ball and cut it into equal pieces, forming small balls from the dough.
Then flatten those balls, and in the center of them, make a slightly deep indentation, into which the cream will be added later.
For the cream, mix the sour cream, egg, and Jerusalem artichoke syrup together.
After obtaining a homogeneous mass, pour the cream into the concave part of the dough and arrange the preferred berries on top.
After completing all these processes, place the blinis/pancakes in a preheated oven (180−190∘C) and bake for 20-25 minutes.
Tip
The remaining egg yolk can be brushed over the dough to get more reddish-brown blinis/pancakes.
Instead of sour cream, you can use "Ani Product" Greek yogurts: classic, vanilla, or with blueberries.
