Ingredients:
• Potatoes: 500g
• Butter: 50g
• Milk "Ani": 50ml
• Eggs: 2
• Grated cheese (Cheddar or Gouda): 100g
• Salt, black pepper, and nutmeg: to taste
Preparation:
1. Peel and chop the potatoes, then boil them in salted water until tender.
2. Drain the water, add butter and milk, and mash until smooth. Let it cool slightly.
3. Separate the egg yolks from the whites. Add the yolks, most of the grated cheese (save some for the topping), and spices to the mashed potatoes. Mix well.
4. In a separate bowl, whip the egg whites until stiff peaks form. Gently fold them into the potato mixture in small batches, stirring from bottom to top.
5. Transfer the mixture into greased baking dishes and sprinkle the remaining cheese on top.
6. Bake in a preheated oven at 180°C for about 25-30 minutes until the soufflé rises and turns beautifully golden. Serve hot.
