Ingredients
- 4 large eggs
- 120 g (½ cup) pumpkin purée
- 180 g (¾ cup) “Ani” kefir
- 3 tbsp sugar
- 30 g (¼ cup) flour
- A pinch of salt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp mixed spices (to taste)
- 30 g (¼ cup) grated ginger or crushed nuts (optional)
- Butter or oil for frying
- 8 slices of brioche or toast bread
- Fresh raspberries for garnish
Directions
- Heat a pan over medium heat and melt a little butter.
- In a bowl, whisk together all ingredients except the bread until smooth and well combined.
- Dip each slice of bread into the mixture, coating both sides evenly.
- Fry on the hot pan until golden brown on both sides.
- Serve warm, drizzled with maple syrup and topped with fresh raspberries.
Tip
For a richer flavor, sprinkle a bit of cinnamon and sugar on top before serving, or add an extra drizzle of maple syrup.
